Abstract. The article examines the main aspects of serving sentences by minors in the Russian Federation. The gender and age composition and terms of serving sentences of this category of special agent in educational colonies are considered. The norms of nutrition established for children and adolescents who find themselves in institutions of the penal system have been determined. The influence of diets on maturation, the development of intelligence and the central nervous system, muscle strengthening and, in general, the normal development of the human body is considered. The size of the distribution of the total daily caloric content for juvenile convicts has been determined. The modes of eating recommended for the preparation of dishes for breakfast, lunch, afternoon tea and dinner are considered. The sizes of dishes served during the day are marked. The tasks facing the employees of the rear divisions of the institutions of the penal enforcement system within the framework of catering for juvenile convicts, as well as a list of criteria for compliance of prepared product layouts with the requirements of current legislation, are determined. Analyzed, developed and used in the course of catering for children and adolescents, information systems of food supply, allowing to optimize and automate the processes of food movement, their purchase, storage, preparation of technological maps and menus for the day, as well as longer periods of time, taking into account the balance of proteins, fats, carbohydrates, minerals, energy value and other factors affecting the formation and development of a growing organism of a child or teenager. At the same time, the practical orientation of the presented material will make it possible to use and optimize existing information systems to automate the process of catering and prevent the occurrence of subjective errors during the food supply of juvenile convicts.
