Abstract. The article provides an assessment of the demographic profile of hospitality and catering enterprises. The dynamics and structure of the main indicators characterizing the state of demographic processes are considered: active, “fading”, fast-growing enterprises. The “birth rate” and “mortality” are analyzed, the values of the natural growth of organizations are calculated and interpreted. To characterize the viability and sustainability of enterprises, the five-year average mortality rates for the group (per 1,000 units) and the proportion of deceased enterprises in the active structure were calculated. To identify structural differences in the structure of age groups relative to the total number of active enterprises, indicators of structural shifts were calculated and characterized – the V.M. Ryabtsev and K. Gatev indices. In order to develop methodological tools for studying demographic processes in the economy, a methodology for calculating the survival rate of enterprises in the first year of life is proposed. The main conclusions obtained on the basis of the conducted research are as follows. The dynamics of the number of operating (active) enterprises in general over the period under review is negative, with the exception of the reporting year. With the increasing demand for domestic tourism (due to international political tensions), the number of active hospitality and catering enterprises may increase in the future. The main characteristic of the growth of active enterprises is the “turnover” criterion. The share of “declining” enterprises is unstable, and there is no definite trend in its dynamics. The structure of fast-growing enterprises is dominated by small enterprises (“mice”), and the type of economic activity under consideration is characterized by a relatively high proportion of fast-growing enterprises compared to other types of economic activity. The structure of active enterprises does not change significantly relative to their age, which indicates the comparative stability of the demographic characteristics of this type of economic activity. The enterprises under consideration are characterized by a fairly high survival rate in the first year of life.
